With the St. Patrick spirit in the air, I couldn’t help myself. I was putting Guinness in everything! Seriously… everything.
It started Sunday afternoon. I rushed home after participating in the local St. Patrick’s Day parade with my coworkers.
Yup, that’s a standard poodle with a shamrock painted on his bum in the front.
Parade behind us, I rushed home and started baking. Step one was to make Guinness Chocolate Cupcakes with Bailey’s Irish Cream Frosting.
The cupcake recipe is from Write Meg’s blog. I was completely amazed how rich the Guinness made the chocolate batter taste. And once it was baked? Girlfriend! (Or boyfriend!) Amazing. Meg offers a Bailey’s buttercream recipe, but I decided to go with the Bailey’s Cream Cheese frosting from Closet Cooking’s blog. The results: Kicked Ass. I sprinkled the cupcakes with some green sugar granules and I was done!

While on the subject of Closet Cooking … I changed up my Corned Beef plate this year and tried Closet Cooking’s Guinness Glazed Slow Cooker Corned Beef. So good! I think that recipe will be a keeper. It also gave me the ability to say I was cracking open a Guinness before 7 a.m. St. Patrick’s Day morning.
Now, our cake of the week! This recipe for a Chocolate Guinness Cake is quite similar to the cupcakes I made for work. The recipe was published in The Virginian Pilot last year. The recipe can also be found here on Simply Recipes. I frosted it with simple cream cheese frosting.
